The earliest records for Bollullos de la Mitación are from the Muslim era when the town started becoming quite important, something that the archaeological artefacts recovered from the area have shown. The most interesting artistic feature of the town lays hidden away in the San Martín de Tours Parish Church. Built in the 18th century, this building houses 4 beautiful canvases by Francisco de Zurbarán.
