would i get a cheaper rate if i shop around for a taxi from the airport and book in advance or is the meter reading from the taxi outside the airport going to end up roughly the same?

Airport transfers charge you for waiting and the pick up charge will be too high for such a short journey. Taxi from airport taxi stand is the best bet or take the train to town centre and get a bus from there.

20 euros from airport to city approx. 1.80 on the train. City centre back to airport is usually 15 euros.

Agreed, train then local taxi. Would be cheaper.
If you have luggage / old people / kids.. Do whats best for the group rather than the cheapest.

Uber drivers get lynched inside the airport. And an illegal cheaper taxi isnt really a good option either.

it is just me with a small suit case, and i am fit and healthy and like to walk!
i found this, does it sound about right?
Airport Express Bus to the last stop five minute walk from there. The Airport bus "A" which departs outside the arrivals hall on the road side to the last stop is best, at the huge roundabout with the fountain. Buses run every 15-25 minutes and it will take about 25 minutes.

I dont think it goes a far as the fountain, it may still terminate on or near Alameda Principal. They have altered the road so the old stop in Principal has gone. I personally would get the train and get off at Malaga Centro not Maria Zambrano. The walk to your address is a brisk 10 minutes or a 15 minute stroll. I am a quick walker and would definitely walk that in around 10 minutes.
