Browsing through Granada Tourism website and found this appetising tapa.
A famous speciality of the provincial capital is Sacromonte Omelette, a dish not suited to delicate palates as it is made from marrow, cooked brains, bulls testicles and eggs.
This is one not to try at home or indeed anywhere

It's a pretty gross thing to put on a tourist website, and can't imagine anyone asking for that recipe, not to mention trying to source some of the ingredients.

Katy, that is truly gross, however I think I'd spot a bulls b*ll in amongst prawns , plus the fact I always carry a couple of little plastic bags with me, I'm too polite to leave a tapa if it looks or tastes dodgy therefore the local dogs usually get a free titbit.

I had a Sacramonte tortilla years ago at a venta near Granada. I had spent three days in bed ill from salmonella poisoning (gazpacho was the culprit I believe) and fancied a light tortilla. It tasted delicious, but when I asked what all the little white pieces in it were and was told "sesos" I promptly brought the lot back up The bull b******s weren't mentioned, but I haven't tried it since
The past cannot be changed, but the present can be spoilt by worrying about the future

Eggs? Yuck!marrow, cooked brains, bulls testicles and eggs.
btw - the portions of testicles are smaller if the matador loses.
