Ayo's Paella, Nerja

It's a long shot but does anyone know the ingredients of Ayo's Paella on Burriana beach in Nerja?

Specifically things like MSG, gluten, milk powder etc. I've noticed the things like chicken, rice, prawns etc :D

So who does make "authentic" Paella?
Surely every region, town, restaurant in Spain claim that their version is the only authentic version?
Ayo`s might or might not be authentic but it is probably the most popular restaurant at Burrianha for paella.

You are right - there are many versions of Paella but the one thing they always have in common is the use of Calasparra rice or the equivalent. It is a rounder, more absorbent rice usually from Valencia.

It is about 4 times as expensive as cheap long grain rice. Ayo's uses the cheapest long grain rice just to make more profit.

That said, it's a great place to go but don't expect the best Paella.

MSG possibly if he uses bought in stock products, but I cannot think of any reason why it would contain gluten or milk products.

Besides for the packet rice everything else looks as if it is fresh ingredients.
There is usually a large aluminium stock pot keeping warm on the charcoal fire.
Seen them chuck odds bits from the roast pork into the pot. Be surprised if he uses stock cubes.

Acouple of years ago, while were in Spain with some friends, my son decided to cook paella for the first time - this was the result :

and it tasted as good s it looked :thumbup:

Last year he repeated it for a friend who has lived in Spain for many years - she declared it the best paella she had ever had :D

at this point I should probably mention that he is a chef.... :wink:

Indeed, it's the stock pot and what's in there that has me thinking. I only ask because I have acid reflux and indigestion when I eat at Ayo's. I didn't want to say that initially because I think this is a specific ingredient relating to me only, it's not a problem with hygiene or quality. I think the paella there is great value, especially as the second plate is free.....hence why I go back so often even though it makes me ill hahaha.

I don't think Ayo would say what was in the magic stock. My uncle-in-law tells me not to eat Paella outside of Valencia :D

I use the Carmencita Paellero mix that gives a good flavour.

I have found in the past that some of Ayo's prawns taste a bit 'woody' that has put me off a bit but it is good value as you can keep going back for 'seconds'.

Try using some Knorr Fish Stock cubes as well - it will make a huge difference.

My wife and I have had Ayo's paella almost every Sunday for nearly 11 years.
Occasionally my wife has had indigestion later.

That's because they have been overcooked and dry out. I always put the prawns in on top of the paella half way through the cooking time.

Dear God :lol: I know as we get older that change is an issue for most people but the same restaurant and the same meal every sunday for eleven years :crazy: .

Went once on a Sunday about 10 years ago. Had the lamb shank and roast spuds. Do they still do that?

They don't do the lamb shank on Sundays, only available on Tuesdays and Thursdays, I think.
Roast pork on Sundays.
