Restaurant Bagá

Tiny Michelin star restaurant (as of the 2019 Guide) which seats just 15 diners, run with great care, effort and attention to detail by head chef Pedro Sánchez Jaén (known as Pedrito to avoid confusion with his political namesake). The restaurant opened in September 2017, and is the first restaurant in Jaén province ever to win a star.

Each week the 65-euro tasting menu (the only option) consisting of 15 courses, which celebrate the cuisine of Jaén province and the surrounding area, in the north-eastern part of Andalucia, changes depending on what the chef favours according to the season, making it a dynamic dining experience.

One of the smallest Michelin star restaurants in Europe, Bagá has a simple interior with wooden tables and chairs, and a colourful ceiling. There are three tables, and four places at the bar.

Typical dishes might include prawns in partridge sauce, endives in juice of smoked eel skin and black olive, roast quail with stewed thighs, and EVOO, chocolate and orange ice-cream.

Pedro Sánchez studied in Baeza, and worked with fellow Michelin-starred chefs Dani Garcia at Tragabuches, and Martin Berasategui.

The Guía Michelin 2019 says:

"This unique restaurant, which takes its name from the flower of the olive, may be lacking in space but makes up for it in the flavours on offer here. The interior boasts appealing decorative detail, while the single menu, focusing on contemporary-Mediterranean cuisine, is prepared with seasonal, locally sourced ingredients.

Bagá won its Michelin star in November 2018, for the 2019 edition of the Guia.
