by Saskia Mier

Carmona is involved in the 'Ruta de la Tapa', a gastronomic tapa route to promote Andalusian cuisine. Restaurants involved in the route are signposted with a blue and white tile with the logo of the city. Typical dishes to try include sopa de picadillo (stock with jam and egg), caracoles (snails), migas (fried bread), salmorejo (tomato soup), espinacas con garbanzos (spinach with chickpeas), cocido rural de tagarninas (wild thistle soup), manitas de cerdo (pigs trotters), perdíz a la cortijera (partridge), patatas en amarillo con bacalao (cod with potatoes) and espárragos con huevos cuajados (asparagus with egg).

Sweets treats to try are torta inglesa, hojaldres (pastries), bollos de leche (milk buns), arroz con leche (rice pudding), torrija (eggy bread), tortas de almendras (almond torte) and guiso de castañas con canela (chestnut stew with cinamon). Also try the anís Los Hermanos (liqueur) distilled locally.
