Pickling Olives

We pickled some olives last year. We picked, then washed the green olives and put them in water and salt. We changed the water once. The olives seem to have lost their original colour to a brown colour. Also, we seem to have lost the top layer as olives went mouldy. We would appreciate your comments and how to preserve the colour and avoid mould happening. In other words, do we need to add some food and colour preservatives? Many thanks.
