Meson Sabor Andaluz – One Michelin Star restaurant in Alcala del Valle.
Pedro Aguilera is the chef of Michelin-starred Mesón Sabor Andaluz restaurant in the small, rural pueblo blanco (white village) of Alcalá del Valle in the Sierra de Grazalema. Alcalá is 8km from Setenil de las Bodegas, famous for its overhanging rocks.
The Michelin Guide highlighted Aguilera’s “cuisine that has grown in complexity through dishes that champion traditional cuisine while increasingly finding their inspiration and identity in the local soil”. The chef collaborates with organic projects in Sanlucar de Barrameda and Cuevas del Becerro, with locally grown ingredients including triguero asparagus and pistachios.
Two tasting menus, Celemín (11 courses) and Fanega (15 courses), are enhanced by family culinary heritage dishes such as the famous Antoñita’s oxtail stew and stewed goat with garlic.
The restaurant was founded in 1995 by Pedro’s parents José Aguilera and Antonia Jimenez, and Pedro joined as chef in 2020 after completing his training. He was recognised as Madrid Fusion's Revelation Chef in 2022.
Meson Sabor Andaluz was awarded its Michelin star in 2024.
