Restaurant Vandelvira
The World Heritage Site of Baeza’s historic quarter is probably one of the least- known in Andalucia, due to less-than-ideal transport links. In a converted 16 th -century Franciscan convent in Jaén city, you’ll find Vandelvira, complete with stone gallery where the dining space is situated (named after the building’s architect), and open kitchen.
Chef Juan Carlos García offers a 15-course tasting menu using his own home-grown vegetables to create daring dishes with unusual textures and flavour combinations. One course might be turnip, ham toffee, and cocoa and partridge éclair. The restaurant pays attention to detail: diners are greeted with a glass of Manzanilla sherry to enjoy in the convent’s patio, and the dinnerware is made locally in Baeza and Ubeda.
Vandelvira opened in 2020, although the chef’s family has used the patio to hold events since 1990; the restaurant was awarded its Michelin star in 2023.
